The Easiest Fruit Cobbler EVER!
it’s day ??? of social distancing and let me tell you, I love my family, but this is A LOT of togetherness. I’m a comfort baker, so when I’m working through anxiety or stress or worry, you can find me in the kitchen (or cleaning… there is very little in between LOL). This cobbler is my go to for potlucks because it’s simple, requires 8 ingredients I almost always have on hand, and it travels really well. No one is traveling these days, but we are almost all cooking from our pantries, and I’m 90% sure you’ve got the ingredients to make this on hand!
OK, I can’t stand reading your life story before a recipe, so without further ado….the easiest fruit cobbler ever!
1 stick butter, melted
1 cup flour
2 cups sugar, divided into two 1 cup portions
pinch of salt
1 tbs baking powder
1 cup milk
1ish tbs lemon juice
4 cups fruit
ice cream (optional for serving!)
First things first, get that oven preheated to 375 F. Grab a 9x13ish Pyrex and pour your stick of melted butter in the bottom. Tilt the dish to get the butter allllll over the bottom of the dish. In a bowl, mix 1 cup flour, 1 cup sugar, pinch of salt, and tbs baking power together with a fork until combined. Pour one cup of milk into flour mixture and stir until just combined (don’t go crazy. there will be lumps. that’s fine). Now take your batter and pour it over the butter mixture in the dish. DO NOT STIR. It looks weird. Trust me, it’ll be fine.
Put Pyrex aside for now. In a pot over medium heat, add your fruit, lemon juice, and 1 cup sugar. You can do whatever fruit your heart desires! Frozen, fresh, canned- whatever. Here I used up what I had in the freezer that I wanted to use up and a few sad strawberries lingering towards the back of the fridge. You just want roughly 4 cups. If you don’t have fresh lemon juice, you can use 4 packets of TrueLemon and 1tbs water. You’re going to stir the sugar/fruit/lemon juice mixture pretty constantly until all the sugar dissolves and things start to get nice and soupy looking. The pour your fruit mixture directly over the batter/butter in the Pyrex.
I realize, this does not look appetizing. TRUST. This is going to get GOOD. Put your one dish wonder into the oven at 375 for 40 minutes, but keep an eye on it. We’re looking for a nice golden crust and bubbles happening around the edges.
RESIST THE URGE to dive in as soon as you take it out of the oven. Please, again, TRUST ME. Let this puppy sit for 20-30 minutes. It is still warm and perfect heaven in your mouth, but without the second degree burns. Ideally, you’d take it out of the oven before you left the house and put it in one of those pyrex transport things and it would be perfect to serve by the time you get where you’re going. I try to take it out of the oven the same time dinner is done, so by the time we’re finished eating dinner and clearing the table, it’s the perfect time to dig into the cobbler. It’s great plain, but extra special with a scoop of vanilla ice cream.
