Han's Perfect Banana Bread Muffins
There are many things my husband loves about me, but when I asked him for a top three, my banana bread muffins made the list. I love banana bread and have spent literally years perfecting the perfect recipe. Now some people prefer to make banana bread in a loaf, but as someone who struggles with portion control, I love that a muffin is a single serving and it feels like more than just a slice!
We also are a family that struggles with how ripe bananas get and who will eat them at their level of ripeness. Alex practically likes crunchy bananas (ew!) while I prefer a light speckle to mine. No matter what, I somehow end up with too many bananas that are riper than we prefer, and this recipe is perfect for those bananas!
This recipe is pretty standard, but there is one secret ingredient that keeps these beauties moist! It makes 12 muffins or mini-loaves depending on the pan style you use, and they freeze well if you want to enjoy them at a later date!
Now I am not a huge MLM person, but y’all Pampered Chef is no joke. My stepMIL hosted a Pampered Chef shower for us before our wedding and I am obsessed with every single item I got and use them all regularly. I use the spoonulas, the mix and masher, the large cookie scoop, and the brownie pan for my banana bread muffins and they turn out perfectly every time!
Now without further ado, the recipe!
3 medium, ripe bananas
1 teaspoon pure vanilla extract
1 large egg
1/3 cup vegetable oil
1.5 cups all-purpose flour
3/4 cup white sugar
1 teaspoon baking soda
1/2 teaspoon salt
4 ounces plain, unsweetened applesauce
Mash bananas in a mixing bowl, then add vanilla, egg, and vegetable oil. Stir until combined. In another bowl, mix dry ingredients: flour, sugar, baking soda (not baking powder!), salt. Stir dry ingredients until combined. Add combined dry ingredients to wet ingredients and mix until just combined. Don’t overstir! Once combined, add in applesauce, and mix until combined. Fill lined muffin tin (or brownie pan from Pampered Chef- no liner needed!). Bake at 375 F for 18-22 minutes or until muffins are golden brown and a toothpick inserted comes out cleanly. For an extra treat, you can add a few chocolate chips or some chopped walnuts to the tops before baking!
